Caymus Vineyards is a family-owned winery located in the heart of Napa Valley, California. The vineyard was founded by Chuck and Betty Caymus in 1985, and has since become known for producing exceptional wines that reflect the unique terroir of the region.

One of the standout wines from Caymus Vineyards is their Cabernet Sauvignon. This wine is known for its rich, full-bodied flavor, with notes of dark fruit, chocolate, and spice. The wine is aged in French oak barrels for a minimum of 18 months, giving it a smooth, velvety finish.

Another exceptional wine from Caymus Vineyards is their Chardonnay. This wine is fermented and aged in French oak barrels, giving it a creamy, buttery flavor with hints of vanilla and citrus. The wine is well-balanced and pairs well with a variety of dishes, from seafood to roasted chicken.

Red Schooner is a brand of wine produced by the well-known Napa Valley winery, Caymus Vineyards. What sets Red Schooner wines apart is that the grapes used to produce them are actually grown in the Andes Mountains of Argentina, then shipped by boat to California for fermentation and aging. The result is a unique and delicious wine with a rich, full-bodied flavor.

Red Schooner wines are made primarily from the Malbec grape, which is known for its deep color, bold flavor, and high tannin content. However, the unique growing conditions in the Andes Mountains give Red Schooner wines a distinctive character that sets them apart from other Malbec wines. The high altitude, cool climate, and rocky soils of the region all contribute to the wine's distinctive flavor profile.

Red Schooner wines are ideal for pairing with bold, flavorful dishes. The wine's high tannin content and full-bodied flavor make it a great match for grilled meats, hearty stews, and other rich, savory dishes. The wine's fruit-forward flavor and smooth finish also make it a great pairing for chocolate desserts or other sweet treats.

  • Can I see the menu?
    Fine wine and food pairing is an art that involves finding the perfect balance between the flavors and textures of both the wine and the food. Pairing wine with food can enhance the dining experience, bringing out the best in both the wine and the dish and creating a harmonious balance of flavors. When it comes to wine and food pairing, the key is to match the intensity and flavor profile of the wine with the dish. For example, a full-bodied red wine pairs well with a hearty beef stew, while a light-bodied white wine complements a seafood dish. Another important aspect of wine and food pairing is considering the individual components of the dish. For example, the acidity of a tomato-based sauce can be balanced by a wine with high acidity, while the richness of a creamy sauce can be complemented by a full-bodied wine with a smooth finish. Ultimately, the goal of fine wine and food pairing is to create a dining experience that is both enjoyable and memorable.   • How long is dinner?
    The dinner is from 7:00-9:00pm. To accommodate our guests in the best way possible, we ask when you make your reservation to allow yourself the full two hours with no early dismissal so we can keep the experience seamless for all guests.
  • How do I make a reservation?
    You can reserve your seats on our website under the Upcoming Events tab. Purchasing your ticket is how you reserve your seat, but please keep in mind, tickets are non-refundable after purchase. If you have a party of more than 2 and are purchasing your tickets separately, we will call to confirm your party size so you can be seated together.
  • Do you allow walk-ins?
    As long as we have availability, yes. We would HIGHLY recommend purchasing your ticket ahead of time since we have a limited number of seats. If you want to wait until day of, give us a call prior to 6:30 so we can assess the availability at that time.
  • What is the required dress code?
    Dress for comfort!
  • What if I need to be excused from the table?
    Your server will be more than happy to guide you to the lobby for any needs you may have, and they will also guide you back when you are ready. In order to make sure all guests have an enjoyable experience, cell phone use is not permitted in the dining room and they must remain off for the entire duration. We appreciate your cooperation with this matter.
  • Is alcohol available for purchase during dinner?
    Yes, full bar is open, and bottles of wine will be able to be purchased during presentation.
  • What is the ticket cost?
    The cost per person is $150.00 per guest and includes a 4 course prix-fixe dinner. Our menu is unique and exclusive to Cantina Ocala. Gratuity is not included in the cost of your dining ticket, and is highly recommended.
